A Few Words About Our Restaurant

Our Story And How It All Started

Real food from real people. Ever since I was I kid I always wanted to be a chef. Always. My mother had all these Time-Life cookbooks that took you all over the world. As a kid I would leaf through those; it’s like traveling in your mind. Food is a great conduit for history and for culture. It’s much more than food; it brings people together.

After attending IUPUI and receiving a degree in Restaurant and Hospitality management I worked at Benvenuti in Indianapolis for almost 10 years, eventually becoming Executive Chef. During my tenure there I took a sabbatical and traveled to Florence, Italy, where I worked in one of the best restaurants in the country. I studied under two French pastry chefs and made hundreds of “closers,” those small pastries that diners receive at the end of the meal, each day. I also rotated through all the stations to learn the entire business and traveled whenever possible throughout the country sampling as many Italian specialties as possible.

In 1999 I opened Carnegie’s in Greenfield. I wanted something historic and grand. I use vegetables and herbs from my own gardens, eggs from my chickens and am proud to say we were farm to table before people even said “farm to table.”
